That Friday Night Blockage Was a Decision Made in March
Emergency grease calls are not accidents. They are the arrival of a maintenance schedule that stopped matching the business some time ago.
The call always comes at the same time
Friday evening, mid service, and a kitchen drain that has been slightly slow for a fortnight finally stops. Every burner is going, the room is full, and the decision in front of the owner is whether to keep serving or to stop.
It is worth being blunt about why that timing is so consistent. It is not bad luck and it is not a coincidence. Peak service is when the system is under maximum load, and a line that has been operating with almost no margin left will give way when the load peaks. The blockage was inevitable for weeks. Only the hour was uncertain.
Which means the useful question is not how to respond faster on a Friday. It is what happened in March that made Friday inevitable.
How the margin disappears
A grease interceptor separates fats, oils and greases from wastewater before it reaches the building drain. It works by retention time. Wastewater slows down, lighter material rises, solids settle, and what leaves is comparatively clean.
That only holds while the accumulated layers leave enough working volume for retention. Once the interceptor fills beyond a certain point, wastewater passes through too quickly to separate properly, and grease starts carrying over into the building line.
The carryover is where the real damage happens, and it is entirely invisible. Fat deposits on the pipe wall a little at a time, the internal diameter narrows, and the line goes on functioning while its margin shrinks. Nothing about the kitchen changes. Nothing looks different. And then one evening the margin runs out.
So an emergency grease call is almost always the second failure. The first was an interceptor left too long, months earlier.
There is a second route to the same place, worth naming because it catches kitchens that do service their interceptor conscientiously. Grease that reaches the line before the interceptor, from a sink or a wash down point that was never routed through it, never gets separated at all. Kitchens get reconfigured, equipment gets added, and a new sink occasionally ends up plumbed straight to the building drain because that was the convenient connection on the day. If your interceptor is on schedule and you are still getting blockages, that is worth checking before anything else.

Why intervals stop matching businesses
Almost every service schedule we encounter was set once, at or near opening, based on assumptions about volume that were reasonable at the time.
Then the business changed. Covers went up. The menu shifted toward more fried items. A delivery channel was added that doubled the kitchen's output without changing anything visible front of house. Staff turned over and whoever used to keep an eye on it moved on. The schedule stayed the same throughout.
There may also be requirements set by the authority having jurisdiction over your premises, and those are worth knowing rather than assuming, because they are a floor rather than necessarily the right interval for how you actually operate.
The practical test is simpler than any regulation. If you have had any carryover into the building line, the interval is already too long, whatever it says on the schedule and whatever the minimum requirement is. That is a measurement of your business rather than of a category it belongs to.
What a proper schedule looks like
Service the interceptor on an interval matched to measured accumulation rather than to a default, and revisit that interval whenever the business changes materially.
Jet the kitchen line periodically rather than waiting for it to close. This is the item most often missed, because servicing the interceptor feels like it covers everything and it does not. Anything that has already carried over is sitting on the pipe wall downstream, and removing it is a jetting job rather than a pumping one.
Establish a camera baseline so you know the actual condition of the run. A recorded inspection from this year makes next year's meaningful, and it protects you from being told the line needs replacing when it does not.
And book all of it into your quiet hours deliberately. Planned work at ten on a Tuesday morning costs a fraction of the same work at seven on a Friday evening, and the difference is not the labour rate. It is the trading you did not lose.
What to do when it happens anyway
Sometimes the schedule was right and something else went wrong. When you are blocked mid service, the first useful thing is not a description of the plumbing.
Tell whoever answers what is out of service and what that costs per hour. That single answer determines the whole response, because it settles whether the sensible move is a stopgap that has you serving again this evening with the real fix diarised for a dead hour, or whether it warrants doing thoroughly on the spot.
Then say what you can and cannot lose the use of. A kitchen with two sinks and one out of action is a different situation from a kitchen with no drainage at all, and a plan built around that distinction is far more useful than one built around the tidiest repair sequence.
Plenty of contractors will not offer the two stage approach, either because it is less profitable or because it feels unsatisfying to leave something imperfect. It is worth asking about before you have an emergency rather than during one. How we handle that is on the commercial page.
The other item that generates letters
While on the subject of things that arrive as a surprise, backflow prevention deserves a mention because it is the other common reason a business hears from its water utility.
Backflow assemblies protect the public supply from contamination flowing backward out of a building, and every water purveyor in this state runs a cross connection control program. Assemblies need periodic testing by a certified tester, and the results go to the purveyor rather than staying with you.
The administrative burden is real and it is entirely manageable if you keep a register: which assemblies you have, where they are, and when each was last tested. Reconstructing that under a deadline is considerably less pleasant than maintaining it.
Certified backflow testing is a specific credential, and asking to see it before booking is reasonable. That applies to us as much as to anybody else.
The pattern across both of these is the same, and it is the point of this whole article. Neither a grease blockage nor an overdue assembly test is a surprise event. Both are scheduled items that stopped being scheduled, and both become expensive precisely because the moment they surface is chosen by circumstance rather than by you. A morning spent writing down what needs servicing, at what interval, and when each was last done is worth more to a commercial kitchen than any amount of emergency response capability.
